Description
Easy one-pot Chicken and Orzo recipe with juicy chicken, tender orzo pasta, and flavorful broth. A creamy, comforting dinner ready in 30 minutes!
Ingredients
1 lb boneless, skinless chicken thighs or breasts
1 cup orzo pasta
2½ cups low-sodium chicken broth
2 tbsp olive oil
½ medium onion, diced
3 garlic cloves, minced
1 tsp dried thyme or Italian seasoning
½ lemon (juice + zest)
Salt and pepper to taste
Optional: 1 cup baby spinach, ¼ cup grated Parmesan, chopped parsley for garnish
Instructions
Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sear for 3–4 minutes per side until golden. Remove from skillet and set aside.
In the same pan, sauté onion and garlic for 2 minutes until fragrant.
Add orzo and stir to coat with oil and aromatics.
Pour in the broth and return chicken to the pan. Sprinkle in thyme or Italian seasoning.
Cover and simmer for 12–15 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.
Stir in lemon juice, zest, and spinach if using. Cook 1–2 minutes more until spinach wilts.
Finish with Parmesan and fresh parsley. Let rest for 5 minutes before serving.
Notes
For extra creaminess, add 2 tablespoons of cream cheese or Greek yogurt before serving. Whole wheat orzo adds fiber. Great for meal prep.
