Description

Easy one-pot Chicken and Orzo recipe with juicy chicken, tender orzo pasta, and flavorful broth. A creamy, comforting dinner ready in 30 minutes!


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts

  • 1 cup orzo pasta

  • 2½ cups low-sodium chicken broth

  • 2 tbsp olive oil

  • ½ medium onion, diced

  • 3 garlic cloves, minced

  • 1 tsp dried thyme or Italian seasoning

  • ½ lemon (juice + zest)

  • Salt and pepper to taste

  • Optional: 1 cup baby spinach, ¼ cup grated Parmesan, chopped parsley for garnish


Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sear for 3–4 minutes per side until golden. Remove from skillet and set aside.

  • In the same pan, sauté onion and garlic for 2 minutes until fragrant.

  • Add orzo and stir to coat with oil and aromatics.

  • Pour in the broth and return chicken to the pan. Sprinkle in thyme or Italian seasoning.

  • Cover and simmer for 12–15 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.

  • Stir in lemon juice, zest, and spinach if using. Cook 1–2 minutes more until spinach wilts.

 

  • Finish with Parmesan and fresh parsley. Let rest for 5 minutes before serving.

Notes

For extra creaminess, add 2 tablespoons of cream cheese or Greek yogurt before serving. Whole wheat orzo adds fiber. Great for meal prep.
