Ingredients
2 cups elbow macaroni
1½ cups full-fat mayonnaise (Best Foods or Hellmann’s)
¼ cup whole milk
1 tablespoon apple cider vinegar
½ teaspoon salt
Optional: ¼ cup shredded carrot
Optional: 2 tablespoons finely grated onion
Optional: 1 teaspoon sugar (for subtle sweetness)
Black pepper to taste
Instructions
Cook the macaroni 2–3 minutes longer than package instructions, until very soft.
Drain and rinse with cold water. Let sit 5 minutes to dry slightly.
In a large bowl, mix mayo, milk, vinegar, salt, and optional sugar until smooth.
Add the cooled pasta and gently fold in until well coated.
Mix in carrot or onion if using.
Cover and chill for at least 2 hours. Stir before serving and adjust seasoning as needed.
Notes
For best texture, chill at least 2 hours. Add milk if it thickens after refrigeration.
