These Iced Birthday Cake Cookies are soft, festive, and full of birthday cake flavor! Topped with creamy icing and colorful sprinkles, they’re perfect for celebrations or everyday treats.
Ingredients
2 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup unsalted butter, room temp
1 cup granulated sugar
1 large egg
1 ½ tsp vanilla extract
1 tsp almond extract (optional)
¼ cup sour cream
½ cup rainbow sprinkles
Buttercream or frosting of choice
Additional sprinkles for decorating
Instructions
In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat butter and sugar until light and fluffy.
Mix in egg, vanilla, almond extract, and sour cream.
Gradually add dry ingredients until just combined.
Fold in rainbow sprinkles.
Cover and chill dough for 30–60 minutes.
Preheat oven to 350°F and line baking sheets with parchment.
Scoop dough into balls and place 2 inches apart.
Bake for 10–12 minutes until edges are set.
Cool completely, then frost and decorate with more sprinkles.
Notes
Chill dough to prevent spreading.
For gluten-free, use 1:1 GF flour blend.
Cookies can be frozen before or after baking.
Let icing dry completely before stacking.
