Ingredients
2 large cucumbers (English or Persian, sliced thin)
2 tablespoons fresh lime juice
1 teaspoon Tajín or chili powder
½ teaspoon sea salt
2 tablespoons chopped fresh cilantro
Optional: thinly sliced red onion, diced mango, cotija cheese
Instructions
Slice cucumbers thinly. If using thick-skinned cucumbers, peel them first.
Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.
Pat dry with a paper towel to retain crunch.
In a bowl, mix lime juice, chili powder (or Tajín), and cilantro.
Toss cucumbers in dressing until evenly coated.
Serve immediately or chill for 15–30 minutes before serving.
