Ingredients
2 cooked chicken breasts, shredded or sliced
2 cups shredded green cabbage
1 cup shredded purple cabbage
1 large carrot, julienned
1 red bell pepper, thinly sliced
2 green onions, chopped
½ cup fresh cilantro, chopped
½ cup fresh mint leaves, torn
¼ cup crushed roasted peanuts
For the Dressing:
3 tbsp fresh lime juice
2 tbsp fish sauce
1 tbsp honey or sugar
1 garlic clove, minced
½ tsp red pepper flakes or 1 Thai chili, finely minced
1 tsp sesame oil (optional)
Instructions
Prepare all vegetables and herbs.
Shred or slice the cooked chicken.
Mix chicken and vegetables in a large bowl.
Whisk together all dressing ingredients.
Pour dressing over the salad and toss well.
Top with crushed peanuts and fresh herbs before serving.
Notes
Keep the dressing separate until serving if storing.
Add more lime juice or chili to suit your taste.
